This delicious dish is aromatic and everything you need for your Chinese New Year dinner. It is made with fresh sea prawns cooked in herbal tonic broth. A shot of Mao Tai rice wine gives this recipe a distinct taste you'll love & remember.

Braised Pork Belly Slab

Chef Aries Tan

A master chef, entrepreneur, and businesswoman, Aries Tan does it all. From the age of 8, Aries fell in love with cooking, and she hasn't looked back since. Finding the culinary art to be incredibly meditative, she especially enjoys techniques like braising, roasting, brining, etc., that require long hours of preparation. Aries shines in Teow Chew, Hainan, and Sze Chuan flavours and is exceptionally skilled in Chinese cooking.

As a home chef, Aries has many accomplishments under her belt. She competed in the Top 15 of Masterchef SG and King of Culinary against celebrity chef Eric Neo. However, Aries's biggest achievement is her homegrown brand of mala chilli sauces, LalaRoujie, with their bestselling Golden Beef Tallow Mala sauce.

While she is well-versed in multiple cuisines, her speciality is combining Asian flavours, Chinese techniques, and Western plating. Her genuine belief in highlighting the similarity of Eastern and Western styles makes her cooking distinct. Her biggest inspiration is her customers. Creating recipes that taste good and are satisfying, and bring joy to people's lives is what Aries chooses to focus on. In joining Esseplore's team of chefs, Aries hopes to widen her culinary circle and create new & delicious dishes for foodies across the island.
