Chef Jimmy Cheang

Chef Jimmy Cheang embarked on a journey in 2009 to explore a renowned aspect of American cuisine – American Barbeque, and has since become a skilled pitmaster and qualified Kansas City Barbeque judge. He especially enjoys the process of preparing the meat– he uses a technique that injects the marinade into the meat before placing it into a smoker with fruitwood. It led him to explore various cuisines and aspects such as Charcuterie, French, Japanese, Chinese and others. With Esseplore, he hopes to show Singapore the delicious world of American Barbeque.


Chef Florence Lim

One half of the duo Nonya_licious, Florence Lim is a Peranakan home chef and baker. It was through her early start in the kitchen that she gained culinary insight into various tastes of the Peranakan cuisine. Influenced by her father and grandmother, she even developed a keen eye for detail. Nonya food is known for its long, time-consuming preparations. Florence is so passionate about food and enjoys the tedious journey of making Peranakan dishes. Her sheer love for cooking and her culture make her feasts and baked goods a must-try.
