Trimmed pork belly is injected with a special marinade, coated with a homemade dry-rub overnight, smoked with American applewood to the targeted temperature and cut into cubes. The cubes are covered in a finishing marinade of maple syrup, bourbon and herbs, and placed back into the smoker till a flavourful tender. It is also served with homemade smoque BBQ sauce. Raw weight is 1.2 -1.5 kg.
